I bet you’ve still got a few remnants of festive food hanging around, I know I have, January’s healthy intentions may have to wait a few more days! At least I’ve got a way of using up those Christmas dates. I quite like dried fruit but I’ve never been that keen on dates for some reason.
This is a sweet and sticky condiment that’s perfect with parathas and brilliant with bhajis. It’s got a nice tart tang from the tamarind paste and it’s nicely spiced without being too hot, a little like a fruity HP/brown sauce.
200g pitted dates
85g tamarind paste
75g brown sugar
1/2 tsp salt
3/4 tsp ground cumin
3/4 tsp ground ginger
1/2 tsp cayenne pepper
Put the dates and the tamarind paste in a medium sauce pan along with 300ml of the water. Cover and boil for around 10 minutes.
Remove from the heat and stir in the sugar, salt, spices and remaining 100ml of water. Bring back to the boil and reduce the heat a little. Leave to gently bubble for a further 10 minutes. Allow the ketchup to cool a bit and then blend it to a thick paste. Seive this to leave you with a smooth thick ketchup.
